Craving comfort food? Try these delicious chickpea patties

Craving comfort food, and especially a big burger, but prefer not to eat meat? We’ve got you covered. This vegan recipe is a nice twist on a ‘classic’ burger. The chickpeas in these patties will leave you feeling full for a long time and are high in protein, making them an excellent vegan replacement for a traditional meat burger.

 

A welcome addition to the patties is the cauliflower, this so-called ‘cruciferous vegetable’ is naturally high in fibre and vitamin B. The high amount of fibre is excellent for weight loss and digestion. Having your burger on a traditional burger bun is of course also a classic and very good option!

Salad with cauliflower and chickpea patties

 

Recipe for 4 people
Preparation time: 60 minutes

 

INGREDIENTS

  • 1 cauliflower
  • 1 can chick peas
  • 1 bell pepper
  • 1 onion
  • 2 garlic cloves
  • 150 gr panko
  • 8 gr turmeric
  • 8 gr cumin
  • Salt and pepper to taste

 

TOPPING

  • 250 ml plant-based yoghurt
  • 25 gr chives

 

SALAD

  • 250 gr mixed lettuce
  • 1 bell pepper

 

 

 

PREPARATIONS

  1. Preheat oven to 375F/190C
  2. Steam the cauliflower until soft
  3. Cut the onion and bell pepper into small cubes and mince the garlic
  4. Saute the onion and bell pepper over low heat until soft
  5. Add the garlic and saute for another minute
  6. In a large bowl, smash the chick peas well with a fork
  7. Add the cauliflower and smash up as well
  8. Add all other ingredients and stir until combined
  9. Mix should be wet but come together in a ball without falling apart
  10. Carefully make a ball in your hands with the mix
  11. Press the ball between hands to make a patty
  12. Place the patty on oiled pan or baking dish
  13. Bake for 25 minutes, flip the patties. and bake for another 20 minutes or until browned

 

Topping

  • Cut the chives in little strips and mix with the yoghurt add salt and pepper to taste

 

Salad

  • Clean the bell pepper and cut in small cubes
  • Mix with the salad and serve with the topping and patties
