Red beet and red endive salad

This salad, made with red beets and red endive is not only delicious, it’s also extremely good for your skin. Red and orange coloured fruit and vegetables contain a high percentage of beta-carotene, which fights free radicals. It also helps to protect your skin from damaging UV-rays because it helps to produce melanin.

Having enough red fruits and vegetables in your diet fights the ageing of the skin and last but not least, it’s also a boost to your immune system. So start eating!  

Recipe for 2 people
Preparation time: 10 minutes

Ingredients for salad

  • 1 red beet cut into blocks
  • 2 heads of red endive, in loose leaves
  • 2 heads of little gem, in loose leaves
  • ½ an avocado in slices
  • 2 tbs capers
  • 50 g feta, crumbled
  • 1 tbs roasted sesame seeds

Ingredients for dressing

  • 60 ml olive oil
  • juice from ½ lemon
  • 2 tsp mustard
  • 2 tbs capers
  • 1 tsp salt
  • Coarsely ground black pepper

Preparation

1. Arrange the blocks of red beet, endive leaves, little gem leaves and pieces of avocado in a salad bowl and divide the crumbled feta and capers over it. Roast the sesame seeds for a short time in a dry frying pan and sprinkle them over your salad.
2. Mix all of the ingredients for the dressing thoroughly; a jar with a lid works wonderfully. Pour the dressing over the salad right before you serve it. Enjoy!
